A quick quesadilla using whatever I had in the fridge. Eggplant, onion, jalapeƱo, mushroom, egg, pepper jack cheese, sriracha. Haven’t had a chance to eat it yet - it’s really hot. Enjoy with half a bottle of Sauvignon Blanc.
EDIT: I fried another slice of eggplant and made a sandwich on toast while I was waiting for this to be ready. You know, like a gangster.
